My healthy meal prep plan for the week! When I am not working out consistently, I like to keep my calorie intake at around 1400 a day. This meal plan kept me feeling energized and satisfied.
Lately, I have been feeling the urge to do some healthy meal prep. Last week I tried a meal plan that I found on YouTube, but this week I kept it simple, using a few of my favorite foods.
What I Eat: Healthy Meal Plan
Breakfast: Breakfast Burrito
I have to give my daughter’s friend credit for this one. We thought she was crazy when she told us what was in it, but it quickly became one of our go-to breakfast recipes.
Ingredients:
- Fresca Uncooked Flour Tortilla
- 1 Egg
- 1/2 Apple Chicken Sausage
- Spinach
- A smear of pesto
- Ketchup for dipping
I cook up some diced onions and season the eggs too. So you can flavor them however you want!
I struggled with the idea of including pesto sauce, but it’s just a smear across the tortilla before loading it with all the other goodies.
And then, when she told me to dip it in ketchup, I rebelled. But, being the adventurous foodie that I am, I gave it a try, and I don’t regret it.
Lunch: Salmon Bowl
I love salmon, so when I saw Chelsea Trevor posted her bowl on Instagram, I knew I needed to make one of my own.
Ingredients:
- Salmon
- Edamame
- Shredded Carrots
- Avocado
- Sushi Rice
I wish I could give you the exact ingredients, but this isn’t really a recipe blog, and I just kind of threw it all together.
I marinated the salmon in maple syrup, soy sauce, and sesame oil. Then I baked it in the oven for 14 minutes (easy peasy).
Dinner: Salmon and Spicy Crab Nigiri
This recipe was inspired by a video I saw on my Alexa Show for Ice Tray Sushi. Luckily, I have an Asian Market nearby, so I picked up some sushi-grade salmon and imitation crab.
I made some sushi rice, mixed the crab with Siracha and Mayo, and sliced up the salmon. I had to make this meal to go because my daughter and I were out shopping around dinner time. This was delicious and so much cheaper than dining out at a sushi restaurant.

Dessert: Popcorn and Hot Cocoa
Okay, I know, this is not the healthiest dessert, but my daughter wanted to have a movie night, so this is what we had on hand.
